First of all, welcome to my home here in Sunny Spain!
I have
It's ZESTY LIME SHRIMP AND AVOCADO SALAD from me today..... I'm hoping someone's bringing the Margaritas!!
Here's what you'll need:
Jumbo Prawns
Red Pepper
Tomato
Avocado
Onion (red is better, but I forgot to get some so I've used a white one for the pic!)
Lime
Coriander (Cilantro)
Jalapeno Pepper (I'm just using paste mixed with my oili, as they are almost impossible to get here!)
Olive Oil
I haven't given quantities, as I reckon with salad you just use as much as you have/fancy at the time.
METHOD
1.In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.
2.In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.

Good morning (hmmmm afternoon for you) Alison, I envy your Naya and this recipe sounds perfect for a sunny, warm day sitting around enjoying friends. I have actually just started to like avocados so will definitely be trying this out this spring :)
