INTERNATIONAL VIRTUAL POT LUCK BLOG HOP!!!

Welcome to this fabby Pot Luck Housewarming party, organised by the lovely DEB over at PAPERTURTLE.

If you have arrived at me from BEVERLY at BE GLORIOUS, you are on the right track...if you've dropped by just by chance, the Hop starts HERE, with Deb herself!

First of all, welcome to my home here in Sunny Spain!

I have cleared shuffled a few things around the dining table (my scrapping table!) in the Naya......that's the large glass-fronted area on the front of the house, so that we can eat there.

It's ZESTY LIME SHRIMP AND AVOCADO  SALAD from me today..... I'm hoping someone's bringing the Margaritas!!

Here's what you'll need:

Jumbo Prawns
Red Pepper
Tomato
Avocado
Onion (red is better, but I forgot to get some so I've used a white one for the pic!)
Lime
Coriander (Cilantro)
Jalapeno Pepper (I'm just using paste mixed with my oili, as they are almost impossible to get here!)
Olive Oil

I haven't given quantities, as I reckon with salad you just use as much as you have/fancy at the time.

METHOD

1.In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

2.In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.

Easy-Peasy...and it should look something like this

If you head over to FIONA'S place now, I'm sure she'll have something yummy  to share with you!
Enjoy the rest of the Hop..and thanks for organising the fun Deb!

  1. Hi Alison! I'm not sure what I love the most about this post: the yummy looking salad (MUST give this a try!!!}, your beautiful setting in Spain, or that sweet photo of you wearing your Team Teal band! It's the first thing I noticed. :o)

Thanks so much for "coming" to my party. I loved being at your house for this leg of the hop! xo
